Matcha has become one of the fastest-growing ingredients in the global food and beverage industry—but many people still ask the same question:
What exactly is matcha?
Matcha is a finely stone-milled powder made from specially cultivated Japanese green tea leaves known as tencha. Unlike traditional green tea, where the leaves are steeped and discarded, matcha allows you to consume the entire tea leaf, delivering a richer flavor, vibrant green color, and naturally high concentration of beneficial nutrients.
Today, matcha is enjoyed around the world in cafés, bakeries, beverages, desserts, nutritional supplements, and cosmetic applications. At Yuminaga, we source premium matcha directly from Japan and supply businesses ranging from independent cafés to global food manufacturers.
What makes matcha different from green tea?
Although matcha, sencha, hojicha, and other Japanese teas all come from the same plant (Camellia sinensis), the way matcha is cultivated and processed makes it unique.
Several weeks before harvest, tea plants intended for matcha are shaded from direct sunlight. This increases chlorophyll production while preserving amino acids such as L-theanine, resulting in a tea with a naturally vibrant green color, smooth umami flavor, and fresh aroma.
After harvesting, only the softest leaves are selected. The stems and veins are removed to create tencha, which is then slowly stone milled into the ultra-fine powder recognized as authentic Japanese matcha.
Unlike brewed green tea, where only the extracted liquid is consumed, matcha allows you to enjoy the entire tea leaf—providing significantly higher levels of antioxidants, vitamins, minerals, and naturally occurring amino acids.
Why is matcha considered a superfood?
Matcha has earned worldwide recognition for its naturally occurring nutritional compounds. Scientific research has associated green tea with numerous health-supporting properties.
Some of the key benefits of matcha include:
- Naturally rich in antioxidants, including EGCG catechins
- High chlorophyll content from shaded cultivation
- Contains L-theanine, known for promoting calm focus
- Provides smooth, sustained energy through the combination of caffeine and amino acids
- Supports overall wellness as part of a balanced lifestyle
- Contains vitamins, minerals, and dietary fiber from the whole tea leaf
Because the entire leaf is consumed, one serving of matcha contains substantially more nutrients than a typical cup of brewed green tea.
What determines matcha quality?
Not all matcha is created equal.
The quality of matcha depends on numerous factors, including cultivar selection, shading period, harvest timing, processing methods, and milling techniques.
At Yuminaga, we evaluate matcha using three essential characteristics:
Color
Premium matcha should display a bright, vivid emerald green color. Proper shading before harvest increases chlorophyll levels, creating the vibrant appearance expected from high-quality Japanese matcha.
Lower grades generally appear duller, with yellow or brown tones resulting from older leaves or reduced shading.
Aroma
Fresh matcha offers a clean, grassy aroma with subtle marine notes and natural sweetness. High-quality tencha preserves delicate aromatic compounds throughout cultivation and processing.
Taste
Premium ceremonial matcha delivers a smooth, rich umami flavor with minimal bitterness.
Culinary grades provide a stronger, more robust profile that performs exceptionally well in lattes, desserts, baking, confectionery, and food manufacturing applications.
Matcha grades explained
Different applications require different grades of matcha. See also our matcha grade guide for cafés.
Ceremonial grade
Produced from the youngest first-harvest leaves, ceremonial matcha offers exceptional sweetness, vibrant color, and a refined umami finish. Ideal for traditional tea preparation and premium beverages.
Premium café grade
Designed for specialty cafés, premium matcha maintains excellent color and flavor even when mixed with milk, making it ideal for matcha lattes, iced beverages, and signature café drinks.
Culinary grade
Formulated for baking, confectionery, ice cream, chocolate, supplements, sauces, and industrial food production, culinary matcha delivers bold flavor while maintaining attractive color throughout processing.
